Mumbai, 12th October 2026: Loya at The Taj Mahal Palace, Mumbai presents Along the River Beas, an exclusive culinary showcase following the course of the Beas from the mountains near Rohtang to Harike in Punjab. The showcase explores the varied culinary traditions associated with the landscapes and communities along the river.
Developed through detailed research by the Chefs and Hosts of Loya, the showcase looks beyond the familiar to lesser-known recipes, native ingredients and culinary practices found across the river basin. The research traces a changing food landscape, from mountain produce and orchard fruits in Himachal Pradesh to the grains, dairy and agricultural traditions of the fertile plains of Punjab.
Executive Chef Rohit Sangwan said, “I come from this region, and its food has always been part of my understanding of the North. This research revealed a wealth of traditions that remain deeply native and lesser known beyond the communities that preserve them. At the heart of Loya is this very pursuit: exploring the Grand North beyond its familiar repertoire and bringing these culinary traditions forward with authenticity. The River Beas gave us a remarkable context in which to do so.”
The research finds expression in preparations such as Siddu, a Kullu favourite served with desi ghee and til-lehsun chutney; Kand Aur Kodhiya Ki Tikki, prepared with elephant yam and walnut; Galgal Murgh, drawing on the distinctive hill citrus; and Harike Machhi. The selection continues with Kangri Chana Dal, Barot Trout Curry, Kaddu Ka Khatta and Phulkari Pulao, followed by desserts including Chulli Ki Kheer, flavoured with apricot.
The beverage selection draws from the same landscape and its produce. Seb Ka Safar, Beas Heritage Sour and Himachal Orchard bring together apple, amla, plum, barley, honey and spices, while Jau Jal and Aloo Bukhara Fizz interpret regional flavours through zero-proof expressions.
Along the River Beas will be presented exclusively for lunch and dinner at Loya, The Taj Mahal Palace, Mumbai, until 25th October 2026.
